nixos/sssd: create symlinks in /etc to fix sssctl
Without this, sssctl fails to read its configuration. Update the NixOS
test to ensure sssctl doesn't regress.

treewide: simplify pkgs.stdenv.lib -> pkgs.lib
The library does not depend on stdenv, that `stdenv` exposes `lib` is
an artifact of the ancient origins of nixpkgs.
